Start by pre-heating your oven to 210°C/425°F/Gas 7. Place a 19cm/8" non-stick deep cake tin into the oven and leave it to get really hot while you mix the ingredients — putting the dough into a piping hot tin ensures a great crust on the bread and prevents the dough from sticking.

Ingredients

  • 200g/7 oz Plain Flour
  • 250g/9 oz Coarse Wholemeal Flour
  • 1 teaspoon Bread Soda
  • 1 teaspoon Baking Powder
  • 1 level teaspoon Salt
  • 1 tablespoons Oat Bran
  • 1 tablespoon Wheat Germ
  • 25g/1 oz Butter or Margarine
  • 1 teaspoon Honey
  • 1 Egg, beaten
  • 12–14fl oz / 350–400ml Buttermilk

Method

  1. Sieve the cream flour, salt, baking powder and bread soda into a bowl.
  2. Add the wholemeal, oat bran and wheat germ and mix well.
